The reason we say bless you is becuase when we sneeze people say or think tha it could be your soul trying to escape your body, and by  saying bless you you prevent the devil from takeing or couropting your soul, it can also be said becuase supposedly when people sneeze their heart stops momentairly and saying bless you is a way to welcome them back to life.
